Sugar Cookies that actually hold their shape!

Great recipes and tutorials.
This recipe makes about 3 dozen (delicious) cookies.

Ingredients:

2 Cups unsalted butter (at room temperature - I left ours out over night to soften).

2 Cups Sugar

2 Large Eggs

3 tsp Pure Vanilla extract 

5 Cups Flour + more for rolling

1 tsp Salt 

Instructions:

Step 1. Cream butter and sugar together with an electric mixer on low to medium speed with paddle attachment. Mix together thoroughly, occasionally scraping down the sides with a spatula.
 Careful not to over mix!

Step 2. Add eggs slowly - don't forget to scrap the sides!

Step 3. Add Vanilla extract. 

Mixture will be thick at this point!

Step 4. Sift flour and salt together in a separate bowl.

Step 5. Add all of the flour mixture at once - cover top with tea towel or plastic cover to prevent flour from escaping during mixing. 
Mix until blended. 

Step 6. Forum dough into a ball - I made 4 little ones - cover with plastic wrap and chill for at least 1 hour. 

Step 7. After the dough has had time to chill - time to get rolling!

On a clean counter surface, sprinkle flour on counter and on rolling pin ( I used an empty clean glass bottle for lack of a rolling pin). Roll out dough until it's 1/4 of an inch thick.
Step 8. Cut your shapes - and re-roll leftover dough out again for more cookies - no more then 3 times though, or the cookies will be tough. 
Once cookies are cut - place on cookies sheet that has been greased - I used tin foil instead - and place in the fridge for at least half an hour. The colder the dough - the better the cookie will hold it's shape, 

Step 9. Place chilled cookies in a 350 degree oven for 8-12 minutes, or until the edges have the slightest hint of brown.
Let cool and decorate!
